Good morning and WELCOME Studio 10 viewers!  Valentine’s Day is quickly approaching and if you are like me…finding a babysitter and getting out this weekend may be tough, but you would still like to make the day special.  Where do we find the TIME??  With the kids, soccer practice, gymnastics, homework, Cub Scouts, work, and all the household stuff to attend to, it’s hard to take a few hours to make a fancy meal to enjoy at home.

Well, you CAN make a delicious meal and have it be ready in under an hour with less than 10 minutes prep time.  Add in a bottle of wine and a candle on the table and you have yourself a fabulous Valentine’s Day dinner 🙂

Ingredients
  • 1 box refrigerated pie crusts, softened as directed on box
  • 1 can (18.6 oz) Progresso Rich & Hearty chicken pot pie style soup - I have used the Light before too
  • 1-2 cups frozen mixed vegetables - about ½ a bag (depending how many your family likes in it!)
  • 2 tablespoons all-purpose flour
  • 1 cup cooked chicken – Shredded, Perdue Short Cuts, Rotisserie or baked leftovers works great
Instructions
  1. Heat oven to 425°F.
  2. Put one of the pie crusts on the bottom of the pie pan
  3. Warm soup, thawed vegetables, chicken and flour on the stove
  4. Spoon into crust-lined pie plate
  5. Top with second crust
  6. Seal edges using your fingers to press them closed
  7. Cut 3-6 slits in the top of the pie crust
  8. Bake 30 to 35 minutes or until crust is golden brown
  9. If the crust begins to brown too much – cover with foil after about 15 minutes
  10. Let stand 5 minutes before serving
  11. Cut into wedges
  12. Enjoy!

    Beefy Nacho Soup
    1lb beef
    1 can fiesta cheese condensed soup
    1 can diced tom w green chiles
    1 tbs of taco seasoning
    1 1/2 cups of milk

    top with cheese and tortilla chips!

    its sooooo good- I added onion, green pepper, and jalapeno to mine the second time i made it -but the recipe the way it is is awesome!

  2. Love this recipe…so easy & tastes GREAT 🙂
    Russian Apricot Chicken
    Ingredients:
    1 (12 oz.) jar of apricot preserves
    1 bottle of Russian salad dressing
    1 to 2 lbs. boneless, skinless chicken breasts
    1/2 onion, chopped
    Directions:
    1. Place chicken breasts inside slow cooker.
    2. In a bowl, mix half the jar of apricot preserves with half the bottle of Russian salad dressing. Stir in the chopped onions. Makes sure it’s mixed well.
    3. Pour the mixture over the chicken.
    4. Cook on low for 8 hours. Serve with rice or mashed potatoes.

  3. My favorite recipe as a non meat eater, would have to be my Veggie Quiche ! It’s usually a big hit with my kids even though veggies are not their favorite thing to eat!

  4. One of my favorite recipes is Italian Pot Roast. It’s so easy and it comes out oh so tender. It falls off your fork. This is what you will need:

    1 pot roast
    1 green pepper
    1 onion
    2 cans diced tomato with oregano and basil

    That is it. You put it all into a crock pot and set and forget. I usually start it before work or low and let it cook all day. It is really good over rice or noodles.

  5. One of our favorite recipes is Baked Pork Chops
    4-5 pork chops
    3/4 tsp. garlic powder
    3/4 tsp. season salt
    1 egg, beaten
    3 T. flour
    1-1/3 cup seasoned breadcrumbs
    2-3 T. olive oil

    Rinse chops and pat dry. Season with garlic powder and season salt.
    Place beaten egg in shallow bowl. Dredge chops in flour, then dip in egg and then coat liberally with breadcrumbs. Heat oil in skillet over medium high heat.
    Fry the chops (5 minute per side) or until breading appears well-browned.
    Transfer chops to a baking dish and cover with foil.
    Bake at 350 degrees for about 1 hour.

  6. Easy french onion beef. Round steak in a crock pot with a can of french onion soup over it, cooked for 6 hours on low. Then put stuffing mix in the pot and let the bread absorb the soup and meat drippings. Easy and everyone like it.

  7. The thing I have been making a lot lately is the Parmesan Chicken (with mayo and breadcrumbs). It’s so easy to change around a bit, and even my very finicky Dad will eat it!

  8. My fave is grilled cheese with provolone cheese and a tiny bit of garlic. It’s better than it sounds. Thank you 🙂

  9. Twice Baked Potato Casserole

    6 medium potato, baked
    1⁄2 tsp salt
    1⁄4 tsp pepper
    1 lb bacon, cooked and drained
    3 cup sour cream
    2 cup mozzarella cheese, shredded
    2 cup cheddar cheese, shredded
    2 scallion, chopped

    Cut peeled potatoes in 1 inch cubes.
    Place half in greased 13 x 9 inch baking dish.
    Sprinkle with half the salt, pepper, and bacon.
    Top with half the sour cream and cheeses.
    Repeat layers.
    Bake uncovered at 350 degrees F (175 degrees C) for 25 minutes.
    Sprinkle with scallions.
