Berry Delicious Frozen Yogurt NILLA Sandwiches
Summer is here and that means it’s the perfect time to enjoy cool treats! My kids (and me!) love being outside enjoying the sun, swimming in the pool, biking, and going for walks and when we get back home we need something sweet and delicious to cool us off. Like these Berry Delicious Frozen Yogurt NILLA Sandwiches. I used greek yogurt for a pinch of protein and I added in fresh berries to make these frozen yogurt NILLA sandwiches extra sweet. The NILLA wafers act as the top and bottom of the “sandwich” and make them easy to hold.
You don’t have to wait 4-5 hours like you do when you make homemade ice cream, these little sandwiches are frozen and ready to eat in about an hour! That makes them perfect for a mid-day snack, night time treat, and honestly, my daughter has been asking for them for breakfast! And I don’t feel guilty about letting her have them for breakfast because they are made with yogurt and berries 😉 These Berry Delicious Frozen Yogurt NILLA Sandwiches are also perfect for gatherings, like the Fourth Of July, you can make a bunch ahead of time, freeze them, and take them out when you ready! They easily come out of the paper cup in about 1 – 2 minutes.
I used plain Greek Yogurt in my recipe, feel free to experiment with vanilla! I didn’t think it needed the extra boost of flavor due to the fresh berries and lemon NILLA wafers. Did you know that NILLA now carries a lemon variety? YES! They are so good, and the flavor is perfect for summer. We almost always have original NILLA wafers in the pantry, the kids love to snack on them and I love that the possibilities are endless for delicious summer recipes.
Now, here is my Berry Delicious Frozen Yogurt NILLA Sandwiches recipe, be sure to Print It and Pin It so that you can make it again and again…starting with Independence Day which is just around the corner.
- Cupcake paper liners
- 1 cup low fat greek yogurt
- 1 cup lite whipped topping
- Lemon NILLA wafers
- Fresh strawberries, sliced
- Place cupcake paper liners in muffin tin
- Place 1 Lemon NILLA wafer in each cup
- Mix yogurt and whipped topping
- Top each Lemon NILLA wafer with one small scoop yogurt/topping mixture
- Top with a strawberry slice or blueberries...or both!
- Top fruit layer with one small scoop yogurt/topping mixture
- Top with 1 Lemon NILLA wafer
- Freeze for at least 1 hour
- *You may need knife to pop them out of muffin tin when done
- Allow to thaw for a minute before peeling off paper
