Recipe: Crockpot Chicken Tacos

I absolutely LOVE Mexican food and this week our recipe is from my friend, Cherylann, it’s for Crockpot Chicken Tacos and it sounds yummy! Plus, who doesn’t just love cooking in the Crockpot?!

Crockpot Chicken Tacos

4 – 6 Boneless Skinless breast of chicken (or 8 pieces if you want to do the recipe after this one)
1 1/2 envelopes of Taco Seasoning Mix
1/2 cup water
salt and pepper to taste

In your crockpot, mix the taco seasoning mix and water. Place chicken in crockpot, cook on low for 8 hours or hi for 6 hours. Take the chicken out of the crockpot, and shred and pour some of the juice from the crockpot on top of the chicken to keep it moist.

Serve with soft taco shells, shredded lettuce, chopped onions, salsa and colby/monterey jack shredded cheese.

As sides try: Rice-A-Roni Spanish rice and Chi Chi’s Corn Cake (found in the Mexican Food section of your supermarket).
